It is a tropical dish, tasty with an explosive mix of flavors that will make you try to cook this dish more than once, I assure you that. Let's go with the recipe:
Ingredients for 4 people
• 4 ripe avocados
• 20 frozen prawns
• ½ grapefruit, peeled and cut into wedges
• 5 onions in vinegar
• 4 sticks of surimi
• 100 g of arugula leaves
• Salt and pepper
• Olive oil
1- With prawns to defrost, prepare a pot with two liters of water and a teaspoon of salt. When the water boils add the salt and the prawns, turn off the heat and wait two minutes.
Then drain the prawns well in a container with ice and water. In this way the shrimp will not lose texture. Fish and shellfish are always kept on ice in restaurants precisely because this element helps to keep the meat firmer.
2- Cut the avocados into two halves and with the help of a spoon, extract the pulp from the avocado and cut into pieces.
We will use only half of the pulp, the rest you can use for another recipe or to make an avocado smoothie.
3- Peel a grapefruit and cut half, into segments, part of the segments into small pieces
4- In a bowl, mix the onions, add the avocado pieces, the cut surimi, the grapefruit and a tablespoon of virgin oil. Mix and add salt and pepper.
5- Place the arugula leaves at the bottom of each avocado, distribute the filling from the previous step in each avocado half.
6- Add the prawns to the filling
