Secreto Ibérico: a spectacular delicacy

Dear guest, the Secreto Ibérico is a really appreciated dish in Spain and trying to cook it during your stay is something you will not regret, it will surely be exquisite. It is a meat that can be barbecued or grilled.

As a tip, say that the most important thing is that the piece that we are going to cook is at room temperature, as this will prevent the loss of juiciness. Before placing it on the griddle or the pan, we must make sure that it is very hot, otherwise, the resulting texture will be softened. To give the correct doneness, just seal the piece on both sides for a couple of minutes - depending on the thickness - and turn it only once.

There are many ways to prepare it and many modalities. The recipe that I am going to give you is for a Secreto Ibérico stuffed with ham, vegetables and mushrooms. If you follow these steps, it will come out juicy.

Ingredients:

• 1 kg of pork secret

• 1 eggplant

• 1 zucchini

• 1 onion

• 1 carrot

• 100 g of ham

• 100 g of mushrooms

• 2 potatoes

Preparation

Cut the vegetables, ham and mushrooms into strips, fry them in a pan with a splash of olive oil (preferably extra virgin) and reserve. Next, we open the secret in the form of a booklet, spread the vegetable sauce inside, put the parts together and seal it on both sides in a pan with very hot olive oil. Afterwards, we put it in the oven for approximately twenty minutes, so that the meat finishes cooking. Meanwhile, we peel and cut the potatoes into slices and fry them in plenty of oil. To conclude, we plate the secret and put the potatoes aside. And enjoy!
