Dear guest, the Costa Tropical of Granada is one of the least crowded places on the southern coast of Spain even in high season, despite having all the ingredients to become the next fashionable destination.
Good weather all year round, wide cultural offer, kilometers and kilometers of beach, location less than an hour away from major points of interest (the Alhambra, Sierra Nevada, Malaga ...) and delicious cuisine, the result of the mix Arab past and western present. A clear example of this rich gastronomy is the torta real.
The torta real is a concave-shaped dessert made from sugar, egg white and almonds. With the dough itself, the mold is made, which is also edible and is formed by a kind of puff pastry, a grayish-brown dough is added inside and finally covered by a layer of meringue.
It is said that this recipe is more than 500 years old and it is a very original sweet, easy to take home after the holidays and it is also delicious and is very difficult to find in other areas of the country.
Now let's go with the recipe:
For the cake:
6 eggs white
425 grams of sugar
300 grams of almonds
For the cover:
1 or 2 egg white
400 grams of sugar
100 grams of water
We prepare a syrup to the point of thread (110 degrees approximately) with half the sugar, 212 grams of sugar and 100 grams of water. Later we bind this syrup, when it has tempered a little with the six egg whites and we mount until stiff. We booked.
Mix the rest of the sugar with the almond flour and mix with the previous egg whites. We pour the dough into a mold of about 20 centimeters and that has a bottom. We have previously lined the mold with baking paper. They also give us the possibility of covering it with a thin layer of puff pastry.
